Ingredients
- 2 tbsp olive oil
- 1 medium onion peeled and finely chopped
- 1 clove garlic, crushed
- 1 tsp ground cumin
- ¼ tsp dried chilli flakes
- ½ tsp paprika
- 1 tsp ground cumin
- ½ tsp ground cinnamon
- 400g can chopped tomatoes in juice
- water
- 1 x 400g can kidney beans, rinsed and drained
- 1x 400g can black beans, rinsed and drained
- 1 x 400g can haricot beans, rinsed and drained
- 1 x 10g veg stock cube
- salt and freshly ground black pepper
Method
- Heat a large heavy pan with the oil and sauté the onions and garlic and spices, until soft.
- Add tomatoes, water, beans and stock cube and really mix well.
- Bring to the boil and then gently simmer for 15-20 minutes.
- Season well with salt and pepper.
- Serve on boiled rice.
