A classic Greek salad, simple and delicious.
- 500g best tasting ripe tomatoes, roughly chopped
- 1 small red onion, finely sliced
- 2 tbsp red wine vinegar
- 6-8 tbsp extra virgin olive oil Greek
- 200g feta cheese cubed
- ground pepper
- 2 tbsp chopped parsley
- juice 1 lemon
- extra Greek olive oil to serve
- Mix altogether really well and leave for 20 minutes and serve.
