Coconut Rice Radish Salad
This dish is so simple and so tasty you have to try it.


  • 2 packets microwave coconut rice, re warmed
  • 8 plump radishes, very finely chopped
  • 1 small head chicory, finely chopped
  • 2 tbsp extra virgin olive oil
  • 2 tbsp mirin
  • 4 tbsp rice wine vinegar
  • 1 tbsp soy sauce
  • salt and freshly milled black pepper

  • Place the rice and radish into a bowl.
  • Add the dressing ingredients and really mix well, then serve at room temperature.
