This dish is so simple and so tasty you have to try it.
- 2 packets microwave coconut rice, re warmed
- 8 plump radishes, very finely chopped
- 1 small head chicory, finely chopped
- 2 tbsp extra virgin olive oil
- 2 tbsp mirin
- 4 tbsp rice wine vinegar
- 1 tbsp soy sauce
- salt and freshly milled black pepper
- Place the rice and radish into a bowl.
- Add the dressing ingredients and really mix well, then serve at room temperature.
