- 250g red or white cabbage very finely sliced, best on a Japanese mandolin
- 1clove of garlic, peeled and finely chopped
- 3 tbsp extra virgin olive oil
- 2 tbsp any vinegar
- 2 good pinches of castor sugar
- 4 tbsp chopped fresh mint
- salt and freshly milled black pepper
Mix all the ingredients together really well, best left for an hour if you can.
