Ingredients
- 3 tbsp fajita or cajun seasoning
- 400g wild Alaska salmon, thinly sliced
- 2 tbsp olive oil
- 8 tortilla wraps
- 125ml sour cream
- 2 handfuls coriander, chopped
- salt and black pepper
- Guacamole:
- 1 ripe avocado, skinned and stoned
- zest of 2 limes
- juice of 1 lime
- 1 tbsp finely chopped red onion
- 1/2 red chilli, deseeded and finely sliced
Method
- To make the guacamole: blend, or mash the avocado with lime zest and juice. Stir through the onion and chilli, then season to taste. Cover and refrigerate
- Sprinkle fajita seasoning over the salmon and fry in hot oil for 2-3 minutes, turning halfway, until cooked through
- Place the salmon in wraps with plenty of homemade guacamole, sour cream and coriander leaves - wrap up tightly and enjoy!
Phil's Tips
Try to pick soft, ripe avocados for the guacamole as they will form a much smoother paste to take on plenty of flavour
