Spiced Turkey


  • 1Ž4 tsp salt
  • 1 medium egg white
  • 1 tsp olive oil
  • 11Ž2 tsp cornflour
  • 500g diced or sliced turkey meat
  • 2 tbsp olive oil
  • 2 cloves garlic, crushed
  • 1 tsp fresh red chilli
  • 1Ž2 tsp ground cumin
  • 4 cardomom seeds, crushed
  • 1Ž2 tsp ground turmeric
  • 1Ž2 tsp paprika
  • 2 tbsp fresh chopped coriander

  • Bring together.
  • Add the meat and leave for a few minutes, to adhere correctly.
  • When ready to cook, removed the turkey and either fry or simmer, removing any excess egg white mixture.
  • The result will be a beautifully moist end result everytime.
  • Heat the oil then add the garlic and cook until crisp.
  • Then add the chilli, cumin, cardamom, turmeric and sauté well.
  • Add the turkey and coat well in the spices and cook through.
  • Off the heat add the paprika and coriander, mix well and season.
  • Saute the turkey after velveting and add the spice mixture.
