Christmas Gin & Tonic Jelly

Quite an odd jelly this but a old combination, very simple to make and is a great Christmas tipple at a party.


  • 5 small sheets leaf gelatine (10g) soaked in cold water until very soft
  • 160mls gin
  • 400mls tonic water
  • 100g castor sugar
  • juice of 1 large lemon
  • 2-3 small sheets of silver leaf

  1. Pour the gin and sugar into a saucepan and just warm through, do not boil.
  2. Remove from the heat and add the soaked gelatine and stir until dissolved.
  3. Add the tonic and cool, but not cold
  4. Add the lemon juice and silver leaf stir well.
  5. Pour into 8 small shot glasses.
  6. Cover with cling film and chill until set.
  7. Serve with lemon wedges.
