Cajun Wild Alaska Salmon with Cucumber and Chilli Dip


  • 2 tbsp olive oil
  • 4 X 150g wild Alaska salmon fillets, skin on
  • 4 tbsp Cajun seasoning
  • zest of 1 lemon
  • salt and black pepper
  • Cucumber Chilli Dip:
  • 1/2 cucumber, cubed
  • 1 red chilli, sliced
  • 4 tbsp Greek yoghurt
  • zest of 1 lemon
  • Juice of 1/2 lemon
  • 1 handful of mint, chopped
  • 1/4 red onion, finely sliced

  • Brush a little olive oil over each salmon fillet and sprinkle over the Cajun seasoning and lemon zest
  • Mix together the ingredients for the dip and season to taste
  • Cook the salmon for 2-3 minutes each side, on the barbecue or griddle, until cooked through
  • Serve salmon fillets with cucumber chilli dip and a fresh green salad

Phil's Tips

Ensure you also brush the barbecue grill with oil to prevent the salmon fillets from sticking.
