This is one of my favourite Christmas pudding recipes ever. It tastes fabulous and is Gluten-Free, so, everyone can enjoy it.
Ingredients
- 110g raisins
- 75g sultanas
- 1 small carrot, grated
- 1 small apple, grated
- 175mls cider
- 50g runny honey
- 50g cornflour (gluten free)
- 100g rice flour
- 50g soft brown sugar
- 50g chopped dried figs
- 50g pine nuts
- 50g chopped dates
- 50g currants
- 50g olive oil
- 50g candied fruits chopped optional
- 35g flaked almonds
- 2 tsp mixed spice
- 2 medium eggs beaten
- salt pinch or two
Method
- Soak all the fruit and carrot in the cider overnight.
- Next day mix well then add the sugar, pinenuts, honey, flours, olive oil, candied fruit, almonds, spice, egg and finally salt.
- Mix well and pack into a 2lb pudding basin.
- Cover with greaseproof paper and foil and secure well.
- Steam for 4 hours.
- Remove and cool.
