Ingredients
- Sauce Mixture
- ¾ pint of Chicken stock
- 10 tbsp Olive oil
- 100g Canned chopped tomatoes
- ½ Onion finely chopped
- 1 ½ tbsp Tomato puree
- 10g Coriander finely chopped
- A clove of Garlic finely chopped
- pinch of salt
- A pinch of Dried red chilli flakes, or to your taste
- Garnish
- ½ pint of Tomato soup
- ½ Avocado pear roughly, chopped
- 35g Tortilla plain lightly salted
- 15g Monterey jack cheese, grated
- A pinch of Coriander, chopped
Method
1) Heat oil add onions & garlic & sweat untill soft.
2) Add chilli flakes & tomato puree & cook out.
3) Add tomatoes, chicken stock, salt & coriander bring to simmer 2 mins.
4) Serve in a bowl add tortilla chips, Monterey Jack cheese, avocado pear & coriander.
