Simple Succulent Turkey Schnitzel With Easy Egg Fried Rice

The light crumbing of the turkey breast fillet makes the end result, juicy and succulent.


  • 2 tbsp olive oil
  • 2 eggs, beaten
  • 200g cooked long grain rice
  • 2 x 150g turkey breast slices, flattened slightly
  • 1 egg lightly beaten
  • 4 tbsp flour
  • 10-12 tablespoons breadcrumbs
  • 4 tbsp olive oil
  • 1 tbsp soft unsalted butter
  • 1 red pepper, sliced
  • 4 spring onions, finely sliced
  • 2 tbsp olive oil
  • salt
  • pepper
  • 1lemon

  1. Heat a wok and add the 2 tbsp of olive oil.
  2. Add the beaten eggs and mix well until the egg is cooked and dry, this is the secret.
  3. Add a little salt and pepper and the rice and warm through, moving the rice all the time.
  4. Cook for 3-4 minutes then keep warm.
  5. Heat the 4 tbsp oil and add the butter heat until foaming, the butter will help brown the breadcrumbs.
  6. Lightly flour the turkey breast fillet, then add to beaten egg and then into the breadcrumbs, patting down so the crumbs stick well.
  7. Add the crumbed slices to the hot oil and butter and cook for 2-3 minutes on each side until cooked then drain well on kitchen towel.
  8. Finally sauté the spring onions and pepper for a couple of minutes to soften, season well with salt and pepper.
  9. To serve, place the fried rice onto a warm plate and top with the cooked schnitzel.
  10. Finally add the Sautéd peppers and onions.
  11. Squeeze a little lemon over.
