Warm Beetroot Relish

Ingredients

  • 4 tbsp sherry vinegar
  • 4 tbsp extra virgin olive oil
  • Salt and pepper

Method

  1. Preheat the oven to 220°C/gas 7.
  2. Place the wrapped beets onto a tray and bake for 45-50 minutes, or until a knife passes through with no resistance.
  3. At this point remove the foil and peel away the skin (I find that wearing rubber gloves makes this much easier).
  4. Cut into small pieces and place into a bowl.
