Wild Alaska Salmon Picnic Rolls with Lemon Pepper Yoghurt Mayo

Wild Alaska Salmon Picnic Rolls with Lemon Pepper Yoghurt Mayo

Ingredients

  • 200g wild Alaska salmon, skinned and thinly sliced
  • 1 tbsp olive oil
  • zest of 1 lemon
  • 2 tsp lemon juice
  • 2 large picnic rolls
  • 2 small handfuls spinach leaves
  • 1 handful parsley, roughly chopped
  • salt and black pepper
  • Yoghurt Mayonnaise:
  • zest of 1 lemon
  • 1 tsp lemon juice
  • 1 tsp cracked black pepper
  • 2 tbsp light mayonnaise
  • 3 tbsp natural yoghurt

Method

  • Coat the salmon fillets in a mixture of olive oil, lemon zest and juice and plenty of salt and pepper
  • Cook the salmon on a solid grill pan on the barbecue or hob top for 1-2 minutes a side until cooked through
  • Meanwhile, mix together the ingredients for the mayonnaise and season to taste
  • Split each roll open, spread with plenty of mayonnaise and fill with spinach, parsley and plenty of barbecued salmon

These picnic rolls are equally delicious cold for packed lunches and picnics, just leave the salmon to cool before adding it to the sandwiches
