Spicy Tomato and Tortilla Soup

Ingredients

  • Sauce Mixture
  • ¾ pint of Chicken stock
  • 10 tbsp Olive oil
  • 100g Canned chopped tomatoes
  • ½ Onion finely chopped
  • 1 ½ tbsp Tomato puree
  • 10g Coriander finely chopped
  • A clove of Garlic finely chopped
  • A pinch of Salt
  • A pinch of Dried red chilli flakes, or to your taste
  • Garnish
  • ½ pint of Tomato soup
  • ½ Avocado pear roughly, chopped
  • 35g Tortilla plain lightly salted
  • 15g Monterey jack cheese, grated
  • A pinch of Coriander, chopped

Method

1) Heat oil add onions & garlic & sweat untill soft.
2) Add chilli flakes & tomato puree & cook out.
3) Add tomatoes, chicken stock, salt & coriander bring to simmer 2 mins.
4) Serve in a bowl add tortilla chips, Monterey Jack cheese, avocado pear & coriander.
