Spiced Christmas Chocolate Fridge Cake

Nice and easy, no baking needed, just melt, stir, chill, all done! Be warned, this cake is so delicious it tends to disappear very quickly.

Ingredients

  • 100g Moser Roth Milk Chocolate, chopped
  • 100g Moser Roth Dark Chocolate (85% cocoa), chopped
  • 225g unsalted butter
  • 4 tbsp Golden Syrup
  • 115g sultanas
  • 3-4 tbsp cocoa powder
  • 1 tsp ground mixed spice
  • 1 x 250g pack Rich Tea biscuits, roughly crushed

Method

  1. Place the chocolate, butter and Golden Syrup into a bowl and gently melt over a pan of simmering water.
  2. Place the sultanas (or any dried fruit) cocoa powder, spice and crushed biscuits into a separate bowl and mix well.
  3. Once the butter and chocolate is melted add the dry ingredients and mix really well.
  4. Spoon into a Swiss Roll tray, lined with baking parchment, and spread the mixture out evenly.
  5. Chill well, overnight is best.
  6. Cut into small pieces when chilled, serve with a nice cup of strong tea.

Any biscuit can be used in this cake. Try using different dried fruits, or even adding a few cashew nuts.

This cake can be made up to one week in advance.

Chill well before serving.
