Rice Cake

Ingredients

  • 1 Pack microwavable rice, warmed through
  • ½ onion, finely sliced
  • 1 handful parsley, chopped
  • 1 egg white, whisked
  • Salt
  • Black Pepper
  • Olive oil

Method

Mix the rice, onion, parsley, egg white, pinch of salt and black pepper in a bowl until combined. Meanwhile heat a little olive oil in a pan until hot. Place the rice mixture in the pan and fry on both sides for a couple of minutes until the cake is golden on both sides and cooked through. Remove from the pan, allow to cool slightly, cut into wedges and enjoy.
