Onion Gravy

Ingredients

  • 3 large onions, very finely sliced
  • 2 tbsp olive oil
  • 1 tbsp flour
  • 2 pints good, strong beef stock
  • salt
  • freshly milled pepper

Method

  1. Heat the oil, then add the onions and cook for 20 minutes to soften, gently with a lid on.
  2. Add the flour and mix well.
  3. Add the stock and again cook gently for 20 minutes or until cooked and thickened.
  4. Season well with salt and pepper, serve.
