Chicken and Aubergine Rolls

Ingredients

  • 1 Aubergine
  • 1 Chicken breast, finely chopped
  • ½ onion, finely sliced
  • 1 egg white
  • Small pinch of Mint, finely chopped
  • Pinch of salt
  • For the Celeriac Remoulade:
  • Half Celeriac cut in julienne strips.
  • 10tbsp mayonnaise
  • 1 handful chopped parsley
  • 2 cloves garlic, crushed
  • Zest of 1 lemon
  • 2 tsp mustard
  • 1tsp olive oil

Method

Blanche the celeriac in salted water until softened, and drain. Place all of the ingredients in a bowl and mix well until combined.

Fry off the aubergine slices in hot oil until they are browned and softened. Meanwhile mix together the chicken, onion, egg white, mint and salt, until combined. Place a small amount of the chicken mixture into the aubergine slices and roll up. Place them on a baking sheet, and bake in the oven at 200oC for approximately 15minutes until the chicken is cooked through.
